
Fifty One Degrees North Magnum Twenty Sixteen
Our most exclusive vintage wine in Magnum. A pale golden colour in the glass, with fine bubbles. The nose is opulent and expressive, filled with ripe citrus notes alongside stone fruits and patisserie. The palate feels luxurious, layered and complex; the flavours here echo those on the nose, with ripe lemon, lemon peel and apricot. In addition, there's red apple and delicate red fruit notes. As the palate develops it shows more toasted hazelnuts, freshly baked croissant, crème anglais, honey and sweet spices. There is a distinct streak of minerality on the palate and a beautiful citrussy freshness, leading to a long and elegant finish.

2016Winemaking
Processing:
Whole bunch pressed and naturally settled for 24 hours.
Fermentation:
10 days at 18-20 degrees Celsius using specialist sparkling wine yeast. Fermented in temperature controlled stainless steel tanks with a 21% fermented in old oak barrels for complexity.
Bottling Date:
11th May 2017.
Lees Ageing:
Minimum 67 months.
