This Library Release wine has been gently maturing in our cellars. Crafted from the 2009 vintage, it's a Chardonnay-dominant blend of the three classic Champagne grape varieties. It's now gorgeously mature and complex.

WHAT IS A LATE DISGORGED WINE?
Every year, we release a small number of late-disgorged wines. These are particularly luxurious and fine thanks to a special winemaking technique.
If you’re already familiar with Dom Perignon’s Plénitude or Bollinger’s RD, then you know the magical combination of freshness allied with delicious flavours of brioche, cream, butter and toast that characterise late-disgorged wines.
TASTING NOTE
Golden in the glass with a delicate mousse. This wine wears its maturity with grace: the nose is an inviting blend of malted notes and raisins. It’s rich, creamy, custardy and sweet with dried fruit and red berries alongside a glimmer of red orchard fruits and a fresh, herbal note akin to coriander. The palate is equally complex with developed tertiary notes alongside sweet fruit and savoury, nutty flavours. It’s rich and structured with a dry, complex finish.

Processing:
Whole bunch pressed and naturally settled for 24-36 hours.
Fermentation:
10 days under 20 degrees celsius using specialist sparkling wine yeast. Fermented in temperature controlled stainless steel tanks.
Bottling Date:
June 2010.
Lees Ageing:
Minimum 70 months.
