
Brut Reserve Late Disgorged Twenty Thirteen
This Library Release wine has been gently maturing in our cellars. A Pinot Noir-dominated blend from a cool vintage that has developed a nuanced nose of lemon and lime, apple blossom and elderflower. There’s also a touch of mallow sweetness and Chantilly cream. The palate is broader with lush peach stone fruit, baked apple compote, ripe cherry and nougat. The overall impression is bright and vibrant with a round, complete finish.

WHAT IS A LATE DISGORGED WINE?
Every year, we release a small number of late-disgorged wines. These are particularly luxurious and fine thanks to a special winemaking technique.
If you’re already familiar with Dom Perignon’s Plénitude or Bollinger’s RD, then you know the magical combination of freshness allied with delicious flavours of brioche, cream, butter and toast that characterise late-disgorged wines.
TASTING NOTE
This late-disgorged wine has a fascinating nose of pear, spice and cloves, but also complex notes of sandalwood, pencil shavings and a mineral, slatey note. The palate is similarly complex and heady, with notes of redcurrant, red fruits and orange zest sitting alongside cloves, cherry bark and a delicious, succulent apricot note. The finish is complex and long.

Processing:
Whole bunch pressed and naturally settled for 24 hours.
Fermentation:
10 days under 20 degrees celsius using specialist sparkling wine yeast. Fermented in temperature controlled stainless steel tanks with a small percentage fermented in old oak barrels for complexity.

June 2014.
Lees Ageing:
90 months.
